The Art of Blending Spices
Aim of the Class
Discover the spiced flavors of Bali’s virtually unknown cuisine. Classes offer a fascinating introduction in to the exotic ingredients and unique culinary heritage of Bali. Class provides a valuable insight into the various techniques, traditional and modern food preparation and the cooking style used in homes across the island. Dressed in black and white aprons and a copy of 12 recipes, participants will be guided into the many secrets, and flavors of Bali and at the same time, discover and feel the peacefulness of a harmonious Warung.
During a satisfying breakfast of Balinese cakes, fruits, black rice pudding and a bowl of tender sweet rice flour dumplings in palm sugar coconut sauce; we will explain the various aspects of Balinese cuisine and with it give participants a better understanding of Bali’s food culture
Dressed in black and white aprons we will first look at the many spices used which give our cuisine it’s so unique and well blended taste and flavor. During the class, we will prepare at least 12 dishes including many of the islands favorites and with it can give you the certainty to cook later authentic Balinese Dishes in the comfort of your home.
The Hosts
Most lessons are hosted by Heinz von Holzen, author of six highly acclaimed Balinese and Indonesian cookbooks, (The Food of Bali, Bali Unveiled – The Secrets of Balinese Cuisine, Feast of Flavors from the Balinese Kitchen, Feast of Flavors from the Indonesian Kitchen, Street Food in Bali, A modern Approach to Indonesian Cuisine and The Little Indonesian Cook book ) and assisted by Ibu Budi and Ibu Putu Eni, two through Balinese Master chefs, which bring with them more then 40 years of experience in Balinese kitchens. Classes are hands on and start with an introduction to the many spices used in preparing the delectable flavors of Bali and end with a sumptuous lunch where guest enjoy to fruits of their hard labor. Classes are limited to maximum 8 participants.

10. Peanut Sauce - Sauce Kacang
11. Vegetable Salad in Peanut Dressing - Pecelan
12. Steamed Black Rice with Coconut and Palm Sugar - Jajan Ijen
13. Fried Bananas - Pisang Goreng
14 Fried Rice / Noodles - Nasi goreng
